Although these waffles are delicious any time of year, the comforting aromas of cinnamon, cloves and molasses will make your kitchen cozy on cold, winter mornings.

Gingerbread Waffles with Blueberry-Orange Sauce

Use a very small saucepan, about 1-quart size, for one package of blueberries so the sauce will thicken without overcooking. Serve waffles hot from the iron, or lay on a rack over a baking sheet and place in a 200 degrees F oven while preparing remaining waffles.

Blueberry-Orange Sauce
  • 1pkg. Volume(6 oz) Driscoll’s Blueberries 
  • 1/4 1/4 1/4cup CUP_USVolumeorange juice 
  • 2Tbsp. TABLESPOON_USVolumegranulated sugar 
  • 1tsp. TEASPOON_USVolumecornstarch 
Gingerbread Waffles
  • 1cup CUP_USVolumeall-purpose flour 
  • 1/4 1/4 1/4cup CUP_USVolumepacked brown sugar 
  • 3/4 3/4 3/4tsp. TEASPOON_USVolumebaking powder 
  • 1/2 1/2 1/2tsp. TEASPOON_USVolumeground ginger 
  • 1/2 1/2 1/2tsp. TEASPOON_USVolumeground cinnamon 
  • 1/8 1/8 1/8tsp. TEASPOON_USVolumeground cloves 
  • 1/8 1/8 1/8tsp. TEASPOON_USVolumesalt 
  • 2each Volumeeggs 
  • 1/3 1/3 1/3cup CUP_USVolume1% milk 
  • 1/4 1/4 1/4cup CUP_USVolumemolasses 
  • 2Tbsp. TABLESPOON_USVolumebutter, melted 
Instructions
  1. Pancakes variation: follow recipe above and reduce milk to 1/4 cup. 
Blueberry-Orange Sauce
  1. Combine blueberries, juice, sugar and cornstarch in a small saucepan. 
  2. Bring to a simmer over medium heat. 
  3. Cook, stirring constantly for 2-3 minutes until sauce thickens and berries soften. 
  4. Remove from heat or keep warm until ready to serve. 
Gingerbread Waffles
  1. Combine flour, brown sugar, baking powder, spices and salt in a medium bowl. 
  2. Whisk in eggs, milk and molasses to make a smooth batter. Stir in butter. 
  3. Bake waffles in preheated waffle iron. 
  4. Serve with warm blueberry-orange sauce.
