Recipe of the Month - June 2010
Pork Ribs with Blackberry Chipotle Glaze
Set up charcoal grill for indirect cooking. Two racks should fit at one time on a charcoal grill.
These ribs can be grilled one day ahead. Simply cover and refrigerate, then bring up to room temperature before glazing and grilling.

Ingredients

Spice Rub

1/4 1/4 1/4cup CUP_USVolumepaprika

1 1 1Tbsp. TABLESPOON_USVolumeblack pepper

2 2 2Tbsp. TABLESPOON_USVolumesugar

1-1/2 1-1/2 1-1/2Tbsp. TABLESPOON_USVolumechili powder
-
1-1/2 1-1/2 1-1/2Tbsp. TABLESPOON_USVolumesalt

1 1 1Tbsp. TABLESPOON_USVolumegarlic powder

1 1 1tsp. TEASPOON_USVolumecayenne pepper
Blackberry Chipotle Glaze
-
1 1 1Tbsp. TABLESPOON_USVolumeolive oil
-
1 1 1cup CUP_USVolumeonion, diced (1 large onion)c

3 3 3cloves Volumegarlic, chopped, large

1 1 1Tbsp. TABLESPOON_USVolumechipotle chilies in adobo, chopped, seeds removed

3 3 3pkg. VolumeDriscoll's Blackberries (6 oz.)

1/2 1/2 1/2cup CUP_USVolumebalsamic vinegar
-
1/2 1/2 1/2cup CUP_USVolumesugar

1 1 1tsp. TEASPOON_USVolumesalt

3 3 3Tbsp. TABLESPOON_USVolumecilantro, chopped
Ribs with Spice Rub

Wash and pat dry ribs.

Mix all ingredients in small bowl until well blended. Rub spice mixture into each side of ribs.

Place ribs on flat baking pan, cover with plastic wrap and refrigerate 2 hours or overnight.
Blackberry Chipotle Glaze

Heat oil in medium saucepan and cook onions over medium high heat 4 minutes or until soft.

Add garlic and sauté 1 minutes. Stir in chipotle chilies cook 1 minute, stirring constantly.

Add blackberries, balsamic vinegar, sugar and salt, stir until blended. Bring to a boil, stirring frequently.

Reduce heat to low. Simmer 35 minutes or until is reduced to 1 ½ cups. Remove from heat.

Pour into food processor or blender puree 2 minutes or until smooth. Strain mixture to remove seeds.
To Grill Ribs

Grill ribs over indirect heat for 20-25 minutes.

Brush both sides of ribs with blackberry chipotle sauce.

Turn over ribs and baste every 10 minutes. Repeat two to three times as the ribs cook through.

When the meat pulls away from the bone, the ribs are done!

Take ribs off the grill and allow to rest for 10 minutes. Sprinkle ribs with cilantro and serve.
Lighten Up Tip
Try using ¼ up honey instead of sugar for glaze.
