Bourbon Raspberry Rub Steak with Raspberry Mango Salsa

Rub Mixture

2/3 2/3 2/3cups CUP_USVolumebourbon. Four Roses

1 1 1pkg. VolumeDriscoll's Raspberries (6 oz.)

2 2 2tsp. TEASPOON_USVolumesugar
Bourbon Raspberry Sauce
-
2-1/2 2-1/2 2-1/2tsp. TEASPOON_USVolumedry mustard

1 1 1Tbsp. TABLESPOON_USVolumepeppercorn melange, crushed

2 2 2tsp. TEASPOON_USVolumegarlic powder

2 2 2tsp. TEASPOON_USVolumesalt

1 1 1tsp. TEASPOON_USVolumesmoky paprika

Raspberry Mango Salsa
-
1 1 1pkg. VolumeDriscoll's Raspberries (6 oz.)

1 1 1each Volumemango, peeled and diced

3 3 3each Volumescallions, trimmed and sliced thinly

2 2 2Tbsp. TABLESPOON_USVolumeorange juice

1 1 1Tbsp. TABLESPOON_USVolumecorn oil

1 1 1Tbsp. TABLESPOON_USVolumemint, slivered

1/2 1/2 1/2tsp. TEASPOON_USVolumesalt

1/2 1/2 1/2tsp. TEASPOON_USVolumepepper
Rub Mixture

Combine bourbon, raspberries and sugar in a small saucepan. Using a fork, mash raspberries until blended.

Bring to a boil over medium high heat, reduce heat and simmer 5 minutes, stirring frequently. Strain.
Bourbon Raspberry Sauce

Combine bourbon, raspberries and sugar in a small saucepan. Using a fork, mash raspberries until blended.

Stir raspberry bourbon sauce, dry mustard, crushed mixed peppercorns, garlic powder, salt, smoky paprika and cayenne pepper in a small bowl until blended.

Brush both sides of steaks with Bourbon raspberry Rub mixture. Cover with plastic wrap and refrigerate 2 hours or overnight.
To cook steaks

Heat grill or broiler. Grill steaks 6 inches from source of heat for 10 minutes, turning once or until meat thermometer reads 140F. medium rare.
Raspberry Mango Salsa

Stir raspberries, mango, scallions, orange juice, corn oil, mint, salt and pepper in a small bowl until blended. Serve over steak.
