Bourbon Raspberry Rub Steak with Raspberry Mango Salsa

Prep Time: 10 minutes   |    Cook Time: 10 minutes   |    Makes: 4 servings

Ingredients
  • 4each Volumebone-in rib eye steaks (8 ounces each) 
Rub Mixture
  • 2/3 2/3 2/3cups CUP_USVolumebourbon. Four Roses 
  • 1pkg. VolumeDriscoll's Raspberries (6 oz.) 
  • 2tsp. TEASPOON_USVolumesugar 
Bourbon Raspberry Sauce
  • 2-1/2 2-1/2 2-1/2tsp. TEASPOON_USVolumedry mustard 
  • 1Tbsp. TABLESPOON_USVolumepeppercorn melange, crushed 
  • 2tsp. TEASPOON_USVolumegarlic powder 
  • 2tsp. TEASPOON_USVolumesalt 
  • 1tsp. TEASPOON_USVolumesmoky paprika 
  • 1tsp. TEASPOON_USVolumecayenne pepper 
Raspberry Mango Salsa
  • 1pkg. VolumeDriscoll's Raspberries (6 oz.) 
  • 1each Volumemango, peeled and diced 
  • 3each Volumescallions, trimmed and sliced thinly 
  • 2Tbsp. TABLESPOON_USVolumeorange juice 
  • 1Tbsp. TABLESPOON_USVolumecorn oil 
  • 1Tbsp. TABLESPOON_USVolumemint, slivered 
  • 1/2 1/2 1/2tsp. TEASPOON_USVolumesalt 
  • 1/2 1/2 1/2tsp. TEASPOON_USVolumepepper 
Rub Mixture
  1. Combine bourbon, raspberries and sugar in a small saucepan. Using a fork, mash raspberries until blended. 
  2. Bring to a boil over medium high heat, reduce heat and simmer 5 minutes, stirring frequently. Strain. 
Bourbon Raspberry Sauce
  1. Combine bourbon, raspberries and sugar in a small saucepan. Using a fork, mash raspberries until blended. 
  2. Stir raspberry bourbon sauce, dry mustard, crushed mixed peppercorns, garlic powder, salt, smoky paprika and cayenne pepper in a small bowl until blended. 
  3. Brush both sides of steaks with Bourbon raspberry Rub mixture. Cover with plastic wrap and refrigerate 2 hours or overnight. 
To cook steaks
  1. Heat grill or broiler. Grill steaks 6 inches from source of heat for 10 minutes, turning once or until meat thermometer reads 140F. medium rare. 
Raspberry Mango Salsa
  1. Stir raspberries, mango, scallions, orange juice, corn oil, mint, salt and pepper in a small bowl until blended. Serve over steak.
