Champagne Berries with Pine Nut Crusted Cheese

Heat just long enough in the hot oven to brown the breadcrumb coating and warm the cheese before it melts. Be cautious removing the hot plate from the oven.

Ingredients
  • 4oz. OUNCE_USVolumesoft goat cheese, chilled
  • 4oz. OUNCE_USVolumecream cheese, chilled
  • 2Tbsp. TABLESPOON_USVolumecoarsely chopped pine nuts
  • 1Tbsp. TABLESPOON_USVolumefine dry bread crumbs
  • 2Tbsp. TABLESPOON_USVolumechampagne or white balsamic vinegar
  • 2Tbsp. TABLESPOON_USVolumegranulated sugar
  • 1Tbsp. TABLESPOON_USVolumehoney
  • 1Tbsp. TABLESPOON_USVolumeolive oil
  • 1pinch Volumesalt and black pepper (each)
  • 1pkg. Volume(6 oz) Driscoll's Raspberries
  • 1pkg. Volume(6 oz) Driscoll's Blackberries
Instructions
  1. Preheat oven to 400°F. 
  2. Blend cheeses with a wooden spoon in a medium bowl.  
  3. Dampen hands with cold water and shape cheese into a 5-inch diameter round.  
  4. Combine pine nuts and bread crumbs on a small plate.  
  5. Roll edges of cheese in nut mixture. Place on an oven-proof plate or shallow baking dish. Pat remaining nut mixture on top of cheese.  
  6. Bake 10 minutes or until lightly browned.  
  7. Meanwhile, combine champagne or vinegar, sugar, honey, oil, salt and pepper in a medium bowl. Gently mix in berries. 
  8. Spoon berries over warm cheese. Serve immediately with flat bread, crackers or sliced baguette.  
  9. Caution: plate may be very hot.  
Lighten Up Tip
Lighten up the recipe by replacing the cream cheese with fat-free or reduced fat cream cheese.
