Beef with Brandy Blueberries Flambé

Buttery brandy sauced blueberries with a hint of thyme is a luxurious finish for sliced beef or steak.

Ingredients
  • 1-1/2 to 2 1-1/2 to 2 1-1/2 to 2lb. POUNDWeightbeef tri-tip, or 4 steaks
  • 1  1  1 pinch VolumeOlive oil
  • 1  1  1 pinch VolumeSalt and pepper
  • 2cloves, pressed
  • 2pkg. Volume(6 oz) Driscoll’s Blueberries
  • 2  2  2 Tbsp. TABLESPOON_USVolumebutter
  • 2  2  2 Tbsp. TABLESPOON_USVolumefresh thyme leaves (stems removed)
  • 2  2  2 tsp. TEASPOON_USVolumegranulated sugar
  • 1/4  1/4  1/4cup CUP_USVolumebrandy
Instructions
  1. Rub beef with olive oil, salt, pepper and garlic.  
  2. Grill to desired doneness and let stand 5 minutes.  
  3. Slice meat if desired. Place on a warmed platter and keep warm while preparing sauce.  
  4. Combine one package blueberries, butter, thyme and sugar in a medium-size uncoated skillet or saucepan.  
  5. Cook over medium-high heat 2-3 minutes, stirring and pressing berries to release juices until sauce starts to thicken.  
  6. Stir in remaining berries and bring to a simmer.  
  7. Add brandy; remove from heat.  
  8. Immediately light with a long handle match or lighter. Swirl and pour berries over meat while flames die down. (For safety, do not pour brandy directly from bottle.)  
  9. Serve warm.
