Blueberry Mint Lemonade

A simple syrup of liquid sugar instead of granulated sugar makes a crystal clear lemonade. Float blueberries in each glass for great flavor and a fun look.

Ingredients
  • 1/2  1/2  1/2cup CUP_USVolumegranulated sugar
  • 1/2  1/2  1/2cup CUP_USVolumewater
  • 1/2  1/2  1/2cup CUP_USVolumelightly packed fresh mint leaves
  • 1  1  1 cup CUP_USVolumefresh lemon juice
  • 1 1/2 1 1/2 1 1/2cup CUP_USVolumecold water
  • 1pkg. Volume(6 oz) Driscoll’s Blueberries
  • 1  1  1 cup CUP_USVolumeice cubes
  • Seltzer water (optional)
Instructions
  1. Combine sugar, 1/2 cup water and mint leaves in a small saucepan.  
  2. Bring to a simmer and stir until sugar dissolves. Remove from heat and let cool.  
  3. Strain mint syrup into a tall pitcher. Stir in lemon juice and water.  
  4. Fill 4 tall glasses with ice cubes and top with one-fourth of the blueberries.  
  5. Add mint lemonade and top with sparkling water, if desired.  
Lighten Up Tip
Lighten up the recipe by substituting sugar-free sweetener in place of the granulated sugar.
