Strawberry Caprese Pasta Salad

Fresh strawberries and basil are a pretty combination that tastes great in this variation of a traditional mozzarella and tomato salad. Traditional Insalata Caprese (salad from the island of Capri) is a simple dish from Italy’s Campania region.

Ingredients
  • 8  8  8 oz. OUNCE_USVolumeDriscoll’s Strawberries
  • 8  8  8 oz. OUNCE_USVolumeshell pasta, cooked, rinsed and cooled
  • 8  8  8 oz. OUNCE_USVolumefresh mozzarella balls, drained
  • 1/4  1/4  1/4cup CUP_USVolumeslivered fresh basil
  • 1/4  1/4  1/4cup CUP_USVolumeslivered red onion
  • 1/4  1/4  1/4cup CUP_USVolumeprepared balsamic vinaigrette
Instructions
  1. Rinse, hull and quarter strawberries.  
  2. Combine strawberries, pasta, mozzarella, basil and onion in a large bowl. (Can be prepared to this point and refrigerated until ready to serve.)  
  3. Drizzle with vinaigrette and mix gently until ingredients are well coated.

Lighten up the recipe - Use reduced fat or reduced calorie balsamic vinaigrette.
