Mixed Berry Almond Cobbler

Prepared by Chef Thomas Connell of Ritz-Carlton, Miami, FL and served at the 2009 South Beach Food & Wine Festival.

This dessert has a thick, buttery, cookie-like topping…definitely not your grandmother’s cobbler! Buy almond meal in your local health food store, or make your own by pulsing raw or blanched almonds in a food processor until very finely ground.

Ingredients
  • 2pkg. Volume(6 oz) Driscoll's Raspberries
  • 2pkg. Volume(6 oz) Driscoll’s Blackberries
  • 2pkg. Volume(6 oz) Driscoll's Blueberries
  • 1cup CUP_USVolumegranulated sugar
  • 1-1/4 1-1/4 1-1/4cup CUP_USVolumeall-purpose flour, divided
  • 1-1/2 1-1/2 1-1/2tsp. TEASPOON_USVolumecinnamon
  • 1/4 1/4 1/4tsp. TEASPOON_USVolumenutmeg
  • 1/4 1/4 1/4tsp. TEASPOON_USVolumeallspice
  • 1-1/2 1-1/2 1-1/2tsp. TEASPOON_USVolumeorange zest
  • 1/4 1/4 1/4cup CUP_USVolumeorange juice
  • 1-1/2 1-1/2 1-1/2tsp. TEASPOON_USVolumevanilla
  • 1cup CUP_USVolumealmond meal
  • 1/2 1/2 1/2cup CUP_USVolumeregular or quick-cooking oats (not instant)
  • 1cup CUP_USVolumebutter, softened (2 sticks)
Instructions
  1. Preheat oven to 350ºF. 
  2. Place berries in a large bowl. Add sugar, 1/4 cup of the flour, spices and orange zest. Stir gently to combine. 
  3. Drizzle orange juice and vanilla over berries. Mix lightly. Place fruit mixture into a 10-inch deep-dish glass pie plate or 9x9-inch baking dish. 
  4. Mix remaining 1 cup flour, almond meal and oats in a large bowl. Add butter and work in with a wooden spoon or pastry cutter until mixture is crumbly. Sprinkle evenly over berries. 
  5. Bake until berries are bubbly and topping is golden brown, 40-45 minutes. (Place a piece of foil on rack under baking dish to catch any drips while baking.) 
  6. Serve warm with vanilla ice cream and sprinkle with nutmeg, if desired.
