Beef Tenderloin with Raspberry Chimichurri

Chimichurri is an Argentinean condiment used like ketchup in America. Typically made with olive oil, vinegar, and a generous amount of parsley, this is a fruity and fresh variation with raspberries and citrus.

Ingredients
  • 3pkg. Volume(6 oz) Driscoll's Raspberries
  • 3cups CUP_USVolumeparsley, fresh and chopped
  • 1/4 1/4 1/4cup CUP_USVolumeorange zest, grated (2-3 large oranges)
  • 2tsp. TEASPOON_USVolumelemon zest, grated
  • 3Tbsp. TABLESPOON_USVolumelemon juice
  • 3Tbsp. TABLESPOON_USVolumegarlic, chopped
  • 2tsp. TEASPOON_USVolumecumin, ground and toasted
  • Salt and pepper, to taste
  • 1beef tenderloin, center cut, about 3 pounds tied
Instructions
  1. Reserve one package of raspberries for serving with beef. 
  2. Blend two packages raspberries and remaining ingredients (except beef) in a blender or food processor until well blended. Season to taste with salt and pepper. 
  3. Season beef with salt and pepper. Roast or grill to desired doneness. Slice. 
  4. Drizzle with raspberry chimichurri and garnish with whole raspberries.
