Strawberry Chicken Salad with Hoisin-Sesame Dressing

This recipe makes extra dressing to have on-hand. Just add strawberries and the remaining ingredients for an easy side or main dish salad in a hurry.

Chicken Salad
  • 1pkg. Volume(16 oz) Driscoll's Strawberries 
  • 12 12 12oz. OUNCE_USVolumecooked, smoked chicken breast 
  • 8oz. OUNCE_USVolumemixed baby greens, washed and dried (about 8 cups) 
  • 3/4 3/4 3/4cups CUP_USVolumejicama, cut into julienne strips 
  • 3/4 3/4 3/4cups CUP_USVolumefennel, thinly sliced 
  • 2green onions, sliced 
Hoisin-Sesame Dressing
  • 1/2 1/2 1/2cup CUP_USVolumevegetable oil 
  • 1/4 1/4 1/4cup CUP_USVolumerice vinegar 
  • 1/4 1/4 1/4cup CUP_USVolumelight soy sauce 
  • 2Tbsp. TABLESPOON_USVolumegranulated sugar 
  • 1Tbsp. TABLESPOON_USVolumehoisin sauce 
  • 1Tbsp. TABLESPOON_USVolumesesame seeds, toasted 
  • 1-1/2 1-1/2 1-1/2tsp. TEASPOON_USVolumesesame oil 
  • 1-1/2 1-1/2 1-1/2tsp. TEASPOON_USVolumeDijon mustard 
  • 1piece of ginger, peeled and chopped into a 1-inch piece 
  • 1medium shallot, peeled and chopped 
  • 1clove Volumegarlic 
  • Fresh pepper, ground to taste 
Hoisin-Sesame Dressing
  1. Place all ingredients in a blender or food processor. Blend until smooth. (Or, grate the ginger and mince the shallot and garlic then whisk all ingredients together.) 
  2. Refrigerate in a covered container. (Makes about 1-1/3 cups) 
Chicken Salad
  1. Rinse, hull and slice or quarter strawberries. 
  2. Combine strawberries, chicken, greens, jicama, fennel and green onion in a large bowl. 
  3. Drizzle with dressing (about ½ cup) and toss gently until evenly mixed.
