Raspberry Turkey Salad

In addition to its fresh, soft form, ricotta is sold as salted, baked or smoked. The pressed, salted and dried variety of this cheese is known as ricotta salata. A milky-white hard cheese used for grating or shaving, ricotta salata is sold in wheels and often decorated with a basket-weave pattern.

Ingredients
  • 1pkg. Volume(6 ounces) Driscoll's Raspberries, rinsed and divided
  • 1/4 1/4 1/4cup CUP_USVolumebalsamic vinegar
  • 1/2 1/2 1/2tsp. TEASPOON_USVolumesugar
  • 1/4 1/4 1/4tsp. TEASPOON_USVolumeblack pepper, coarse ground
  • 4oz. OUNCE_USVolumefield greens
  • 4oz. OUNCE_USVolumesugar snap peas, trimmed and blanched
  • 6oz. OUNCE_USVolumeturkey strips, cooked and sliced
  • 2oz. OUNCE_USVolumericotta salata cheese, grated
Instructions
  1. Purée 1/2 cup of the raspberries, balsamic vinegar, and sugar in a food processor or blender; strain. Stir in black pepper. 
  2. Combine field greens, remaining 1 cup raspberries, sugar snap peas and turkey in medium bowl. 
  3. Drizzle dressing over salad. Toss until evenly coated. Divide between two serving plates. Sprinkle with cheese.
